As we settle in for a warm and tasty autumn, we can look forward to the bounty of fruit & vegetables that comes with harvest time. With a little imagination, and your favorite turkey part, a tasty meal can be made with little effort. When I harvested this wonderful bowl of prairie-grown apples, I instanly thought of the wonderful aroma of baked apples and cinnamon. This inspired my delicious Apple Turkey Bake. Any apple variety can be substituted, but a tart apple would be best.
3 cups cored and sliced apples
1 - 1 1/2 lbs turkey thigh (boneless)
1/2 cup brown sugar
1 tsp cinnamon
1/2 tsp allspice
salt and pepper
Layer apple sices on the bottom of a 9" baking dish. Cover with the turkey thigh. (If the thigh is quite thick, it can be cut into serving-size portions.) Sprinkle sugar, cinnamon and allspice evenly over dish. Add salt and pepper to taste. Bake approximately 1 hour in a 350 degree oven. It will be ready to enjoy when your home is filled with the aroma of fresh baked apples and turkey! Enjoy!
Serve with rice and fresh green beans for a tasty meal.
