Turkey Cutlets


Turkey Cutlets
1 Kg Turkey Breast 2 lbs
1 Egg 1
250 ml Milk 1 cup
500 g Bread or Panko Crumbs 2 cups
60 g Mixed Spices 1/4 cup
60 ml Canola Oil 1/4 cup
Spices: Sea Salt, Rosemary, Thyme, Garlic, Roasted Garlic, Ground Pepper
Slice Turkey Breast into 1" pieces. Use a meat pounder to reduce the thickness to 1/2 ". Beat egg and milk together in one bowl. Mix bread crumbs and spices together in another bowl. Heat oil in fry-pan over med-high heat. Dip cutlets into milk & egg, then coat with bread crumb mixture. Fry till golden brown (2 mins per side). Place cutlets on cookie sheet and finish cooking, 15 mins in a 325 F oven. Cover with foil and let stand 5 mins. Serve as is or in a bun with mayo.
For family fun, try cutting the cutlets into shapes with a cookie cutter, or into strips for dipping.

Mmmm Apples & Turkey

As we settle in for a warm and tasty autumn, we can look forward to the bounty of fruit & vegetables that comes with harvest time. With a little imagination, and your favorite turkey part, a tasty meal can be made with little effort. When I harvested this wonderful bowl of prairie-grown apples, I instanly thought of the wonderful aroma of baked apples and cinnamon. This inspired my delicious Apple Turkey Bake. Any apple variety can be substituted, but a tart apple would be best.

3 cups cored and sliced apples
1 - 1 1/2 lbs turkey thigh (boneless)
1/2 cup brown sugar
1 tsp cinnamon
1/2 tsp allspice
salt and pepper

Layer apple sices on the bottom of a 9" baking dish. Cover with the turkey thigh. (If the thigh is quite thick, it can be cut into serving-size portions.) Sprinkle sugar, cinnamon and allspice evenly over dish. Add salt and pepper to taste. Bake approximately 1 hour in a 350 degree oven. It will be ready to enjoy when your home is filled with the aroma of fresh baked apples and turkey! Enjoy!

Serve with rice and fresh green beans for a tasty meal.

Halloween Turkey Vertibrae

Here's a great trick for your next Halloween party. Guests of any age will gobble up these treats, so make plenty!

And don't be afraid to eat as many as you want...turkey is always a healthy choice!


I assembled my vertibrae around some develish eyeballs and a skeleton head.


Turkey Vertibrae

1 pkg round soft tortilla shells (10)

12 oz. turkey ham (slivered)

12 oz. soft cream cheese (goat cheese works well too)

1 pkg frozen spinach (drained)

1 red pepper (slivered)

or 6 oz. softened sun-dried tomatoes (drained)


Spread cream cheese evenly over tortilla shells, sprinkle evenly with turkey ham and spinach. Make a straight line, down the center, with the peppers (or tomatoes) ...to form a "bloody vein". Roll tortilla shells then wrap in wax paper and chill. slice into 1 inch vertibrae.
